Whip Up Homemade Energy Truffles

 

These truffles have the two-pronged value of being homemade energy bars. They provide high quality energy for before a workout: unrefined sugars, monosaturated fats and omega 3s. And as the latter, they are rich, delicious and borderline effortless.

You can make them out of any nut, nut butter, dried fruit or flavouring you like. Peanuts, dates and cocoa come together to resemble a natural peanut butter cup. Spices like cinnamon, ginger, and even cayenne add a sharp or subtle kick. Coconut and dried pineapple turn these treats tropical.

But this Mediterranean incarnation is my personal favourite. Between the earthiness of the walnuts and sesame, the sweetness of the dates, and the crisp popping texture of the fig seeds, each bite has multiple layers of delicious complexity.

Energy Truffles

What you’ll need:

  • 5 medjool dates
  • ½ cup almonds
  • 5 dried figs
  • ½ cup walnuts
  • 1 tbsp tahini

How to make it:

Put all the ingredients in your food processor and blend until they come together in a paste, as smooth or as crunchy as you would like. Form into balls. Refrigerate.
